As you may know, I’ve been cooking my way through Bouchon, a precise and complex cookbook that’s fortunately more manageable than French Laundry that Carol conquered.
In contrast, Keller presents family-style comfort foods in his latest addition; its description reads, “quicker and easier recipes that will be embraced by both kitchen novices and more experienced cooks who want the ultimate recipes for American comfort-food classics.”
So I ask myself… what do I desire in a comfort food?
Personally, comfort food must be as comfortable to prepare as it is to consume. My ideal dish is: simple, readily available, warm, flavorful, filling, and requires little preparation and clean-up.
After an exhausting workday last week, I really needed something to warm my tummy up. Within 20 minutes, I threw together this one-pot meal that definitely hit the spot.
Tender eggplant and bamboo shoots with slippery rice noodles, bathed in a rich sauce with a kick of garlic, ginger, and chili.
That, my loves, is my utmost comfort.
Ingredients
- 8-9 baby eggplants or 1 regular eggplant cut into bite-sized pieces
- 1 large bamboo shoot cut into bite-sized pieces
- 1 medium onion, quartered and sliced
- 1 bunch green onions, sliced thin
- 2 servings of pre-blanched rice noodles
- 1/2 cup rice wine or sake

Aromatics
- 1 knob of ginger, peeled and minced
- 1 handful of garlic cloves, chopped fine
- 2 chilies, deseeded and minced

Use a tablespoon to scrape the skin off the ginger. Smash the garlic!
Sauce
- 1/4 cup soy bean paste of choice (Chinese bean paste, Japanese Miso…)
- 1/4 cup black Chinese vinegar (or Balsamic)
- 1/4 cup soy sauce
- 1 tbs sesame oil
- 1 tbs brown sugar
Directions
In a pot, sauté the onion with a pinch of salt over medium-low heat until deeply caramelized. Deglaze with the rice wine.
Add the aromatics and cook for 1 minute.

Add the sauce, eggplant, and bamboo shoots to the pot and stir to combine.
Cover with a lid and continue to cook over medium-low heat for 10 minutes, stirring occasionally.
When vegetables are tender, toss in the noodles and gently heat through.
Top with green onions and chili.
Serve warm with a glass of well-earned wine.

I have many comfort food dishes, but the go-to is always going to involve mashed potatoes of some sort. Garlicky spuds mashed with skins still on or whipped with cream and a bit of truffle oil..and always with a lot of butter and salt. @luckyfish

Favorite comfort food right now is green curry pumpkin over basmati rice. The curry has chunks of pumpkin, coconut milk and green curry paste with any greens in the fridge.
I make the sauce a bit thin with veggie broth and presto a meal that actually can be eaten by everyone in my gluten, amaranth, quinoa, potato, dairy free house. @gfdoctor
I have to admit that my comfort food is super simple: Nice bread, toasted, crunchy natural peanut butter, honey.

Would love to have this book - I went to French Laundry for a tasting lunch several years ago: it really was the BEST meal i’ve ever had. But it would be nice to cook some of his food.
My absolute favorite comfort food is sweet corn tamales. Served hot with some cool sour cream there is nothing sweeter than the creamy corn to pick you up when the world is bringing you down. Sweet corn tamales always make me happy!
I have two favorite comfort foods. My go to feel good meal is chili & my “oh my goodness I miss my parents & could use a hug” meal is stew. :) My dad was a single father for quite a while when I was very little. He used to make meals that would stretch to make the money stretch. We had a bunch of stew & I hated it. Now that I’m an adult, I can appreciate it & nothing connects me more to home…except peach cobbler, (that’s my comfort dessert)! @catsee

My idea of a comfort food is what is served at the right time among right people. I enjoy the food my mom feeds me after she sees a tired me - Hot steamed rice with rightly cooked soft dal(lentils) with a dollop of ghee mixed to perfection and shaped to tiny round balls. I would just gobble them away before makes another. It is followed by a spicy stir fried vegetable inevitably ivy gourd/coccinicea for, I love that vegetable like noone else does. The reddish tinge and the burst of flavors in the mouth because it is coming from the right person, pure awesomeness. My beautiful meal comes to an end with the humblest of foods, curd rice with home made pickle. There is a happy happy me at the end of it!Thanks for letting me remember all the good times.
My favourite comfort food would be fried rice (preferably kimchi fried rice) or in the winter, a nice hot-pot type stew. I also love bread, all the time :).

When it comes to comfort food, all I can think about is a steaming bowl of Pho my mom makes when its cold. The rich broth infused with different herbs and spices topped off with tender slices of beef and tripe, green onions, cilantro, hoisin sauce, sriracha, and the thing that ties it all together, a squeeze of lemon. All of these components makes the best comfort food any Vietnamese kid can dream of on a cold day.
I love homemade macaroni and cheese. I love to use gryere cheese and a cream sauce. I sprinkle garlic breadcrumbs on top with a sprinkle of cheese and bake until a yummy gooey mess.
I call it Thanksgiving in a bowl. Stuffing with turkey on top. Mached Potatoes covering that. Gravy tops it off and then some cranberr sauce on top. I make it with the t-Day leftoveres and it helps get me through the “my family is insane” holiday blues.

Lots of beef bourguignon on top of creamy mashed potatoes (with a few small lumps) with a fresh green salad with a balsamic vinegar and olive oil dressing. Yes, perhaps it takes a long time to prepare but I make it last for several evenings so all I have to do is make fresh mashed potatoes and warm up the beef! Followed by warmed up but leftover rhubarb crumble.

A steaming hot bowl of Spicy Beef Noodle with a side of big fat Shanghai Juicy Buns. Perfect rainy day comfort food for me.
My favourite comfort food is Shepherd’s pie, with buttery rosemary mashed potatoes…homemade gravy…mixed veggies…all encased in a flaky, homemade pie shell.

My favorite comfort food is dolsot bibimbap (are you familiar with it?). You drizzle sesame oil inside the hot stone bowl before you place the rice in so it gets crusty and caramelized on the bottom when it comes out. It’s topped with sauteed vegetables, gochujang, sometimes meat (pork is my favorite) and a raw egg.
What it lacks in presentation it makes up for in taste. After you mix all of the ingredients together it’s an amazing combination. Definitely my top comfort food.

mine, a perfectly roasted chicken, usually stuffed with lemons & rosemary. rubbed heavily w/salt, pepper, butter & olive oil. Roasted potatoes surrounding the bird. Perfect Sunday dinner food. Serve w/bottle of great wine, some crusty warm bread and a winter vegetable. I have yet to try Thomas Keller’s version though.
While I am constantly comforted by the usual suspects, mashed potatoes and gravy, mac and cheese, warm chicken and dumplings, and homey desserts like warm fruit pies and hot fudge sundaes, the one thing I find myself making when life begins to bring anguish and ill feelings my way is a steaming cup of black tea, sweetened liberally and clouded with a rich spash of cream. As a child, my mother would prepare sweet creamy black tea for my little sisters and I when ever we ailed, physically or emotionally.
I remember the ceremony of it all, my small hands wrapping around the steamy grown up sized mug, watching her add the extra spoon of sugar, “just the way you like it” she would smile and say. It never failed to go down easy and sooth my petite and juvenile woes. She kept a box of Red Rose tea on hand at all times, an army of tiny ceramic animals scattered through out junk drawers and basement boxes clutters my mothers house to tell the tale. While i have upgraded my taste in tea from red rose to Keeman from the local tea shop, the dried leaves sit at the ready in my cupboard for the moment I need comforting, steeped and liberally sweetened, clouded with cream, and soothing as ever, just like mom used to make.

my favourite comfort meal would be traditional italian ragu simmered for hours and intense in layers of flavour.
My favourite comfort overall though would be my mother’s apple pie - crust made from scratch and a crumble topping. No one who tastes her pie ever forgets it and no other pie ever compares.

Slow braised short ribs with lots of garlic,onions, tomatoes, mushrooms and good wine -served in a bowl over creamy corn meal mush that you have stirred parmesan, cream and butter into - Really homey, layers of flavor, and the corn meal mush is way easier to make than polenta -the smell of it cooking brings comfort all day.
